Six ways to use honey in an Indian kitchen

The four RabisNest honeys on a wooden slab in warm golden light

Honey is not just for a spoonful in warm water. Its different characters — dark and smoky, light and floral — make it a wonderfully flexible ingredient. Here are six easy ways to use it every day, and which RabisNest honey we reach for.

1. Masala chai

Brew your chai as usual, take it off the heat and let it cool for a minute before stirring in the honey. This keeps the honey’s aroma bright. Best with: Forest Honey, which holds its own against ginger and cardamom.

2. Sweet lassi

Blend thick curd, a little cold water, a pinch of cardamom and a tablespoon of honey. Lighter than sugar and far more interesting. Best with: Mountain Honey.

3. Tandoori and tikka marinades

A teaspoon of honey in a yogurt and spice marinade helps paneer, chicken or vegetables caramelise beautifully at the edges. Best with: Forest Honey, whose deep caramel notes love a little char.

4. A simple salad dressing

Whisk one part honey, one part lemon juice and two parts oil with salt, pepper and a pinch of roasted cumin. Perfect over kachumber or sprouts. Best with: Mountain Honey.

5. Breakfast bowls

Drizzle over curd with fruit and nuts, over overnight oats, or over a warm bowl of poha-style flattened rice with banana. Best with: Himalayan Wild Honey for its floral, herbal lift.

6. Desserts and halwa

Finish kheer, sheer khurma or a plain sooji halwa with a thread of honey once it is off the heat, or drizzle it over a slice of warm cake. Best with: Wild Honey, our Reserve, for a smooth, golden finish.

A note on cooking with honey

Honey is sweeter than sugar, so start with a little less and taste as you go. And please do not give honey to babies under one year old — this applies to all honey, raw or otherwise.
